It' s just as fast as making a smoothie, and just as versatile, too. Once I show you the basics of making one, I'm sure you'll find lots of ways to customize it to suit your own tastes. Here's why you'll love it:

  • Convenient and nutritious - This recipe delivers a healthy, low-carb breakfast that's ready in less than 5 minutes, making it a lifesaver on a busy morning.
  • So versatile - Whether you like your eggs loaded with spinach and tomato or filled with sausage and peppers, think of this recipe as a flexible foundation. You can tweak it endlessly to fit your cravings, and whatever's in your fridge.

Ingredients Breakdown

  • Eggs - we always use large eggs for this, but it really doesn't matter what type of egg you use.  You can easily swap them for a liquid egg replacer if you prefer.
  • Vegetables - Tomatoes, bell peppers, spinach, kale, broccoli, or mushrooms all add vibrant color and nutrition. The best part?  You pick whatever you love or have on hand, making this recipe as fresh as your vegetables.
  • Extra Protein - I usually cook some lean sausage, turkey bacon, or dice up some leftover ham and keep it in the fridge for easy breakfasts throughout the week.
  • Cheese - Cheddar, pepper jack, or gouda melt beautifully on top lending creamy richness to every bite.
  • Seasonings -  a pinch of salt and pepper is the best starting point, but feel free to jazz it up with smoked paprika, red pepper flakes, or your favorite seasoning blend.  

Tools You Need

Really all you need is a large mug or a small microwave safe bowl. A ceramic mug is ideal for this recipe (the lids shown aren't necessary for the egg mug recipe). I'll add links to an awesome microwave-safe mug and bowl so you can see what type of dishes work well for this recipe.

Pro Tips 👇

  1. Butter the mug generously: A little butter on the inside of your mug prevents sticking and makes cleanup easier. It also adds a delicious flavor that pairs perfectly with the eggs.
  2. Don't overcook the eggs: Microwave cooking times vary, so after the initial minute, cook in 20 to 30 second bursts until there is no liquid egg left. Stirring in between helps distribute the heat evenly for consistently fluffy finished product.
  3. Use a fork or whisk to beat the eggs well: Vigorous beating introduces air, which results in a lighter, fluffier egg mug. It'll even give your mug that creamy texture that feels like a treat first thing in the morning. 
  4. Prepare your stir-ins ahead of time: Finely dice some veggies and keep them in an airtight container in the fridge. Cook some sausage or bacon and do the same. This way, mornings are even easier, and you can just toss everything in your mug without a second thought.

5 Minute Egg Mug Step by Step

Once you have some diced veggies ready to go, and some bacon or sausage cooked, it couldn't be easier to make an egg mug. Scroll down to read the recipe card for the full info. Here's how you make it:

step 1. crack eggs into mug

Step 1. Butter a large mug (or a small bowl). Crack 2-3 eggs into the mug and beat with a fork.

step 2. add veggies and protein

Step 2. Add chopped veggies, sausage (or other protein), and whisk into the eggs to combine.

step 3. add sesaonings

Step 3. Season with salt, pepper, or other seasoning that you like.

step 4. microwave 1 minute

Step 4. Microwave egg mixture on high for 1 minute. It will probably have parts that are cooked, and parts that are still liquid - this is normal.

step 5. stir, add cheese

Step 5. Stir the mixture to distribute the uncooked parts more evenly, and top with shredded cheese.

step 6. heat until done

Step 6. Microwave 20-30 seconds longer, until the cheese melts and it's done to your liking.

Flavor Boosters

Add heat: Mix in diced hot peppers or green chilies, or a shake of hot sauce for a spicy upgrade that will wake you up and get your day started!

Cheese swaps: Try cream cheese or soft goat cheese instead of shredded for a smooth, tangy twist. 

Flavor infusion: Add fresh chopped herbs like chives, parsley, or basil, or some finely diced raw tomato to the egg mug right after it comes out of the microwave. The residual heat gently warms the tomato and herbs for a burst of fresh, earthy flavor.
