Take leftover rice, add creamy eggs, crispy bits of bacon or sausage, and your favorite veggies and make yourself a hearty breakfast in a matter of minutes.

If you have some leftover rice, some leftover protein like bacon or sausage, and some diced veggies - in a few minutes you can create an easy breakfast even on a busy day. I think it just might become your new favorite breakfast! Here's why:

Ingredients
- Cooked rice - make it in advance, hot rice turns kind of gummy in this recipe. Day-old rice is perfect for this.
- Eggs (oops! not shown 🤦♀️)
- Breakfast sausage, cooked
- Bacon, cooked and crumbled
- Red bell peppers, diced
- Spinach, finely chopped
- Mushrooms, diced
- Salt and pepper
- Cooking oil, like avocado oil, olive oil, or coconut oil

What Else Can You Add?
Whatever you like to put in an omelette would go great in breakfast fried rice. Here's some ideas to get you thinking:
- Canadian bacon or ham
- red pepper flakes
- replace the oil with bacon fat
- broccoli
- zucchini
- Hot sauce
Meal Prep is the Way
If you don't happen to have these leftover meats and vegetables or any cold cooked rice, then make yourself some on purpose! It will pay off all week with easy and healthy breakfasts.
Whenever I make rice for dinner, I always cook extra so I can have the leftovers for breakfast fried rice, or to go with lunch the next day.
It saves time to also cook and crumble some pork sausage or several slices of bacon, and keep them in a container in the fridge to use throughout the week.When I buy vegetables from the grocery store, it saves time to take a few minutes to wash and dice some peppers, mushrooms, and spinach right when you get home, instead of putting the vegetables in that drawer in the fridge where you may (or may not) use them. The next time you want breakfast fried rice, or a quick egg mug in the microwave, you'll be ready 👍

How to Make Breakfast Fried Rice
Once you have your leftover white rice ( or brown, or jasmine rice, etc. as long as it's cold), and your chopped vegetables of choice, this quick recipe comes together in just a few minutes.

Step 1. Heat a large skillet over medium-high heat. Add a little oil and cook the protein and veggies until tender.

Step 2. Add the cold rice and reduce heat to medium-low. Make a well in the center of the skillet and crack in the eggs.

Step 3. Cook and stir constantly until the eggs are the way you like (I like mine a little creamy, not too hard). Season with salt and pepper. Add a dash of hot sauce or red pepper flakes (optional)

Bonus Tip 👇
While cooking the fried rice, stir and scrape the bottom of the skillet constantly using a tool with a flat edge, like a flat wooden spoon, spatula or turner. If you don't, the egg might turn too brown or burn.
How to Store Leftovers
If you have any leftovers, let them cool completely before storing in an airtight container with a lid.
Keep in the fridge for 4-5 days.
