Microwave Egg Mug - Perfect Quick Breakfast Recipe

Hot and steamy, fluffy and creamy - low carb egg mugs are cheesy, comforting and packed with protein - along with a healthy dose of vegetables. Whatever you like to put in an omelette will be fantastic in an egg mug!

Ingredients

  • 2 - 3 large eggs
  • 2 tablespoons of extra protein, like cooked sausage, bacon, or ham
  • Diced veggies (to taste) such as bell peppers, spinach, mushrooms, or broccoli
  • Salt and pepper, to taste
  • 1 -2 tablespoons shredded cheese

Instructions

  1. Butter a large mug (or a small bowl). Crack 2-3 eggs into the mug and beat with a fork.
  2. Add chopped veggies, sausage (or other protein), and whisk into the eggs to combine.
  3.  Season with salt, pepper, or other seasoning that you like.
  4.  Microwave egg mixture on high for 1 minute. It will probably have parts that are cooked, and parts that are still liquid - this is normal.
  5. Stir the mixture to distribute the uncooked parts more evenly, and top with shredded cheese.
  6. Microwave 20-30 seconds longer, until the cheese melts and it’s done to your liking.
