Walnut Chicken Salad

Happy Monday everyone! Today is a bright sunny morning, which you can see in my photo 🙂

We grilled up some chicken again last weekend, so at least I have that to work with for lunches this week. Normally I do a weekly food prep over the weekend, but I spent my free time last weekend cleaning carpets and moving furniture. Maybe this will be a week of "last minute bento lunch ideas" ha ha. But really, once you get the hang of it, bentos can be put together in the same time it takes to make a sandwich and throw some chips and drink in a lunch box.

This morning I realized I had all the ingredients for one of my favorite salads - Walnut chicken salad with cranberries. So I decided to post my recipe in case you want to make it too.

Walnut Chicken Salad with Cranberries
1 cooked and diced chicken breast
1 granny smith apple, peeled and chopped
2 celery stalks, chopped
¼ cup walnuts, crushed or chopped
1 Tbsp. dried cranberries
1 Tbsp. golden raisins ( optional)
dressing;
2 Tbsp. low fat mayo
2 - 3 Tbsp. plain greek yogurt
1 tsp. honey
dash of salt and cracked pepper
Whisk dressing together and pour over the first 6 ingredients, tossed together in a bowl.  You can really add a little something here, or subtract a little something there in this recipe. That's often how I cook anyway! Serve over lettuce leaves.
Here's what I have planned to eat today:
breakfast - 2 banana protein muffins, 1 egg
snack - blueberry protein shake
lunch - the bento shown above: walnut chicken salad, raw veggies and low fat dip, a babybel cheese
afternoon snack - ½ apple and protein peanut butter
dinner -TBD... yes, normally I have these things planned already, but I haven't completed my menu planning for the week yet. But I guarantee it will be healthy 🙂
Exercise will be a lower body work out, and yoga.

    If you can do almonds, then sliced almonds are really good in this recipe
