Walnut chicken salad with cranberries

- 1 cooked and diced chicken breast
- 1 granny smith apple (peeled and chopped)
- 2 celery stalks (chopped)
- 1/4 cup walnuts (crushed or chopped)
- 1 Tbsp . dried cranberries
- 1 Tbsp . golden raisins (optional)
- dressing;
- 2 Tbsp . low fat mayo
- 2 - 3 Tbsp . plain greek yogurt
- 1 tsp . honey
- dash of salt and cracked pepper
Instructions
- Whisk dressing together and pour over the first 6 ingredients, tossed together in a bowl. You can really add a little something here, or subtract a little something there in this recipe. That's often how I cook anyway! Serve over lettuce leaves.
