Walnut chicken salad with cranberries

Ingredients

  • 1 cooked and diced chicken breast
  • 1 granny smith apple (peeled and chopped)
  • 2 celery stalks (chopped)
  • 1/4 cup walnuts (crushed or chopped)
  • 1 Tbsp . dried cranberries
  • 1 Tbsp . golden raisins (optional)
  • dressing;
  • 2 Tbsp . low fat mayo
  • 2 - 3 Tbsp . plain greek yogurt
  • 1 tsp . honey
  • dash of salt and cracked pepper

Instructions

  1. Whisk dressing together and pour over the first 6 ingredients, tossed together in a bowl. You can really add a little something here, or subtract a little something there in this recipe. That's often how I cook anyway! Serve over lettuce leaves.
