Breakfast Fried Rice Recipe

This unique twist on fried rice combines crispy bacon, sausage, eggs, and all the yummy veggies you love in an omelette in one bowl for a grab and go breakfast!

If you have some leftover rice, some leftover protein like bacon or sausage, and some diced veggies - in a few minutes you can create an easy breakfast even on a busy day. I think it just might become your new favorite breakfast!

Ingredients

  • 2 cups or 16 ounces cooked and crumbled pork sausage
  • 1/2 cup cooked and crumbled bacon (optional)
  • 1 cup finely diced vegetables, like bell pepper, spinach, mushrooms, etc.
  • 2 teaspoons oil
  • 4 cups cold, cooked rice
  • 3 eggs
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add a little oil and cook the sausage, bacon, and veggies until tender.
  2. Add the cold rice and reduce heat to medium-low. Make a well in the center of the skillet and crack in the eggs.
  3. Cook and stir constantly until the eggs are the way you like (I like mine a little creamy, not too hard). Season with salt and pepper. Add a dash of hot sauce or red pepper flakes (optional).
