Chicken Salad and Cantaloupe Bento

I made these lunches for my husband, son, and myself when we went on a little road trip for the day. My husband needed to go to Salt Lake City for business ( we live about an hour away) so we went along for the ride - AND it gave me an opportunity to go to Trader Joe's for the first time! It's funny that  my recipes are in this cookbook:  Cooking with Trader Joe's Cookbook: Easy Lunch Boxes  and I never got to see a Trader Joe's until just a few days ago 🙂   Utah just got a Trader Joe's this past December, and I finally got a chance to go shopping there - and I LOVE that place! I found a lot of great gluten free foods and other healthy foods for a really reasonable price. If only I lived closer...

In our lunches I packed Chicken Walnut Salad, raw veggies and dip, and cantaloupe cut with one of my fancy bento cutters that I got for my birthday - and they work  really well for cutting cantaloupe!

I couldn't find these exact cutters online, but here are some other steel flower cutters that I love and use all the time:

My son doesn't like chicken salad, so he got a sandwich in his lunch. I love this 2 tier bento box! I actually found it at T.J. Maxx for $3.99 - awesome!

It's actually a bento bag that I made. I sell them in my etsy shop and you can find them here. I created these especially for eating on the road - they lay flat to act as a placemat/napkin to keep your clothes and hands clean. The food gets packed inside the bag like this:

I keep the bag in my purse and pull out my food when I need it. Actually, my son spilled some of his dip when we were eating lunch in the car and I just tossed him this lunch bag and he used it to wipe up the spill. I just turned the bag inside out so the dirty part wouldn't get anything else dirty, and I just tossed it in the wash when we got home - easy!

    Cute lunches! That salad looks yummy! I have never seen a Trader Joe's either as I am Florida. I see people blogging about what they get there all the time. Kinda upsetting we don't have them here :[
