Easy 5 Minute Guacamole Recipe with No Onions

Creamy, ripe avocado, tangy lime, and cool sour cream combine with salsa to make the easiest, no-fuss guacamole that everyone loves. It's got all the elements you need to be restaurant quality even though it could not be easier.

Let's talk about the kind of guacamole that actually gets made on a Tuesday night.

Not the version with perfectly diced tomatoes, hand-minced garlic, and cilantro stems you spent 20 minutes prepping. The real-life version that happens when you want fresh, creamy, flavorful guac without destroying your cutting board. This guacamole is faster than ordering takeout and tastes better than anything you'll find in a plastic container.

This is my go-to recipe for a last minute touch to a Mexican style meal. It's for those times you say,"we should have guacamole with this".  Even after all the food is ready, you can still whip this up to go with your meal.

In our house, we really don't like onions. And pretty much every commercial and restaurant guacamole has a ton of onions in it. That's what spurred me on to make my own recipe without any onions.

Most people who taste my guacamole (even the onion lovers) have said how good it is and ask me what's in it. My husband always says "the secret ingredient is - no onions" 😉

  • Feeds: this makes about 2 ½ cups of guac, which could feed about 10 people
  • Prep time/ actual time spent in kitchen: You can be done with this, start to finish, in about 5 minutes
  • The key to this fast prep is using prepared salsa. Skip all that chopping!
  • Aaand - this is one of the few guacamole recipes that contains no onions (did I mention that I hate onions?)

Here's What You Need 

You only need a few ingredients to make luscious  guacamole that will have everyone coming back for scoop after scoop. So why not whip up a quick batch of fresh guacamole? You'll be glad you did!

  • Avocado - this is your base, your star player, the reason why you're here. Ripe avocados should yield slightly to gentle pressure, and not have any sunken areas (way too overripe!). If the avocado is rock hard, let it sit for another day before using it for guacamole. 
  • Salsa - We make a point of researching brands of salsa that are free of those pesky onions. Scroll down to see what brands we recommend.
  • Sour cream - regular sour cream works here, but if you need yours to be dairy free, I would go with Tofutti brand sour cream,
  • Garlic powder - this gives you that savory garlic flavor without the harshness or prep work of fresh garlic.
  • Salt and pepper - Salt is non-negotiable. It amplifies every other flavor in the bowl and makes the avocado taste like more than just creamy mush. Start with ¾ teaspoon, taste, and add more if needed. Different salsas have different salt levels, so you'll need to adjust based on what you're using.
  • Hot sauce - This is where you control the heat. Louisiana-style hot sauce like Tabasco adds vinegar-forward heat with a bright kick. Sriracha brings a thicker, slightly sweeter heat with garlic undertones. Pick whichever one matches you like, and adjust the amount based on how much fire you want.
  • Citric acid, or fruit preservative - This is the secret weapon that keeps your guac green for days instead of hours. Citric acid is a natural preservative used in canning, and Fruit Fresh is basically citric acid blended with vitamin C. Both work by lowering the pH and blocking the enzymes that cause browning. You can find citric acid in the canning aisle of most grocery stores, or order it online. Fruit Fresh brand powder is the easiest to find and works perfectly. If you can't find either, you can substitute ½ teaspoon of vitamin C powder, which does essentially the same thing.

What Brands of Salsa Have No Onions?

🌶️ La Victoria: Their Suprema Salsa is famous for being onion-free, relying entirely on ripe tomatoes and Santa Fe chiles for flavor. You can find this in most major grocery stores.

🥑 Rivera's Family Recipe: This brand's medium salsa specifically excludes onions, preservatives, and sugar ( I love that!).  This can be found on Amazon or at some Walmarts.

🍅Mateo's - We love this brand, and it's readily available at our Walmart, and also Costco. As their label says, "not responsible for obsession". It's excellent.

🍋‍🟩 Another promising brand (but one we haven't yet tried) is Fody Foods: Known for gut-friendly, low-FODMAP foods, they offer certified onion-free and garlic-free Mild, Medium, and Salsa Verde options.

Easy Way to Peel Avocado

Before you make the guacamole, first you have to peel  those avocados. This quartering method is much easier than trying to wrestle the pit out with a knife or spoon, and it's safer too.

Step 1. Use a sharp knife to cut each avocado in half lengthwise. Twist the halves apart. 

step 2. cut into quarters

Step 2. Cut around the pit to break each half into quarters. The pit will pop out easily during this step.

step 3. scoop out flesh

Step 3. Use a spoon to scoop the flesh out of the skin and drop it into your bowl. 

Now Let's Make the Guacamole

step 1. combine avocado, salsa

Step 1. Add the peeled avocado to a bowl along with the salsa, salt, pepper, and garlic powder. Adding these ingredients now means they'll get mashed into the avocado as you work, distributing flavor evenly from the start.

Step 2. Use your potato masher or fork to break down the avocado, pressing and folding as you go. If you want chunky guac with visible avocado pieces, stop when you've got a mix of creamy base and small chunks. If you want it smooth, keep mashing until it's almost uniform. This should take about a minute of steady mashing.

step 3. add sour cream, lime

Step 3. Pour in the tablespoon of lime juice and the ½ teaspoon of citric acid or Fruit Fresh, then spoon in the sour cream. These ingredients will thin the guac slightly and make it creamier, so don't worry if it looks a little loose at first. It will firm up a bit if you chill it.

Step 4. Stir in the teaspoon of hot sauce, then taste the guac. The rest is up to you -  need more salt? Add a pinch. Want more heat? Drizzle in extra hot sauce. Craving more tang? Squeeze in a bit more lime juice or a pinch of citric acid powder.

  5. Store in an airtight container and keep chilled until serving time

Notes: the combination of lime juice and citric acid (or Fruit Fresh) will let this guacamole keep its green color for longer, especially if it's kept in an airtight container.

How to Prevent Guacamole from Turning Brown

For all you "skimmers" out there, 👁️ 👁️ I see you guys. If you scrolled down JUST to look at this section, here it is in a nutshell:

  1. Include acid, like the lime juice in this recipe.
  2. Also add fruit preservative powder or citric acid powder. Or vitamin C powder.
  3. Keep it in the fridge in a small bowl with an airtight lid.
  4. Bonus tip not mentioned in the recipe: lay a piece of saran wrap over the guacamole, smoothing it across the whole surface in order to stop contact with any air. Then add the lid. I don't do this personally, because I don't want to waste any precious guacamole once I peel away the plastic, but you could give it a try.

It should stay good at least a day or two before turning brown. 

FAQs About Guacamole

How long can guacamole last in the fridge? 

Guacamole typically lasts in the fridge for 1 to 3 days. Because avocados oxidize and turn brown quickly, it has a short shelf life. Make one small batch at a time instead of a big double batch.

What ingredients help guacamole last longer?

I have found that using 2 different types of acid-containing ingredients is the key to longer lasting guacamole. Lime juice is  a good one. And I also include powdered citric acid, or vitamin C powder, or Fruit Fresh brand fruit preservative powder.

Is guacamole good for you? 

Yes, guacamole is very nutritious and good for your health! The fats in avocado help your body absorb fat-soluble vitamins (like A, D, E, and K) from other healthy foods you might be eating with it. The healthy fats slow digestion, which can help prevent sudden blood sugar spikes.

Does saran wrap stop guacamole from turning brown?

Yes, Saran wrap can stop guacamole from turning brown, but only if you press the wrap directly onto the surface of the dip to eliminate all air pockets. Because oxidation causes the browning, blocking the air with cling film can help keep the guacamole vibrant green for up to two days. But you do lose a little of that delicious guac every time you peel it away to have a scoop.

What to Eat with This Recipe

This guacamole is ridiculously versatile, and it plays well with everything from tortilla chips to full meals.

  • The obvious move: tortilla chips- Go for thick, restaurant-style chips that can handle the weight of the guac without snapping.
  • Mexican-inspired mains- This guac is the perfect partner for dishes like Creamy Gluten Free Chicken Enchiladas, Instant Pot Sweet Pork (Cafe Rio Copycat), and anything topped with Easy Blender Enchilada Sauce with Fresh Tomatoes.
  • Rice and grain bowls- Spoon this over Instant Pot Lime Cilantro Rice, add black beans, grilled chicken, and shredded cheese, and you've basically built a burrito bowl.
  • Taco Tuesday- Cook up some quick tacos using my 5 Minute Taco Seasoning (no onions) for a completely onion-free taco spread that's so quick to throw together.
