And this is total hands-off time, where you can go get ready and put out the fires that always crop up on a hectic morning, instead of trying to keep a close eye on keeping your eggs from burning.
This is perfect for those who love a hearty breakfast but don't have lots of time to spend cleaning up the kitchen. Whether you're meal prepping for a busy week, or just want something savory that pairs with a muffin or hash browns for an easy breakfast, this slow cooker frittata will probably be on rotation at your house.

What's in this Recipe
- A dozen eggs - I use large eggs in this recipe. Cooking this in the crockpot means the eggs don't get brown and dry - they're steamed to perfection!
- Heavy cream - you can also use half and half or milk, but 100% cream = creamy & dreamy!
- Cooked and crumbled breakfast sausage - this can be cooked ahead of time and stored in the fridge for a couple of days if needed until you make the frittata.
- Crispy bacon is a great alternative to sausage. Cooked and diced turkey bacon is delicious in this recipe.
- Chopped green bell pepper or other colorful bell peppers. Diced green chiles are another great way to add some flavor.
- Cherry tomatoes - fresh diced tomatoes, or also sun dried tomatoes are excellent in this breakfast treat.
- Salt, black pepper, and garlic powder - can't go wrong with these basics.
- Cheese - we love sharp cheddar, but other great choices are feta cheese, goat cheese, or pepper jack.

You only need a few tools to pull this off: a slow cooker/crock pot to do the heavy lifting, a bowl for mixing your ingredients, a whisk to beat those eggs nice and smooth, and a large skillet to cook your sausage and peppers before tossing everything together.

You won't believe how easy this is - just whisk your eggs and cream, mix in the cooked sausage, veggies, cheese, and spices, then pour everything into the crock pot. Set the slow cooker for 30 minutes, and you're all set!

Step 1. Brown the sausage, remove and drain on paper towels.

Step 2. Sauté the peppers in the drippings left from the sausage.

Step 3. Whisk the eggs and cream in a bowl until blended.

Step 4. Butter or grease your slow cooker, then pour in the beaten eggs and cream.

Step 5. Stir in the meat and veggies, salt, pepper, and garlic powder.

Step 6. Cover with the lid and heat on high for 30 minutes. Sprinkle with cheese, leave the lid on until the cheese melts.

How to Reheat for an Easy & Hearty Meal
- Remove a portion from the fridge, place on a plate
- Cover loosely with a paper towel or plastic wrap in case the egg pops while heating.
- In the microwave, heat on high heat for 30 seconds.
- If it's not heated through, heat for an additional 20-30 seconds until it's hot and ready to eat.
- Top with hot sauce, sour cream, etc. and enjoy.

- 1 lb. breakfast sausage
- 1 cup diced bell pepper

Instructions
- On medium high heat, brown the sausage, remove and drain on paper towels.
- Sauté the peppers in the drippings left from the sausage (or you can just cook them both together if you like).
- Whisk eggs and cream in a bowl until blended.
- Butter or grease your slow cooker, then pour in the egg mixture.
- Stir in the meat and veggies, salt, pepper, and garlic powder. Reserve the cheese for later.
- Cover with the lid and heat on high for 30 minutes. Once the eggs are set, sprinkle with cheese and leave the lid on just until the cheese melts.
Notes
I highly recommend using heavy cream for this recipe, but half and half or milk will work fine - you just might lose some of that dreamy creaminess!
You can substitute cooked and crumbled bacon for the sausage if you prefer. 5-6 slices of bacon works well in this recipe.
