You would think slow cooker = hours and hours, but you might be surprised to learn that this little breakfast gem cooks in only 30 minutes. And this is total hands-off time, where you can go get ready and put out the fires that always crop up on a hectic morning, instead of trying to keep a close eye on keeping your eggs from burning.

This is perfect for those who love a hearty breakfast but don't have lots of time to spend cleaning up the kitchen. Whether you're meal prepping for a busy week, or just want something savory that pairs with a muffin or hash browns for an easy breakfast, this slow cooker frittata will probably be on rotation at your house.

crockpot frittata ingredients

What's in this Recipe

  • A dozen eggs  - I use large eggs in this recipe. Cooking this in the crockpot means the eggs don't get brown and dry - they're steamed to perfection!
  • Heavy cream - you can also use half and half or milk, but 100% cream = creamy & dreamy!
  • Cooked and crumbled breakfast sausage - this can be cooked ahead of time and stored in the fridge for a couple of days if needed until you make the frittata.
  • Crispy bacon is a great alternative to sausage. Cooked and diced turkey bacon is delicious in this recipe.
  • Chopped green bell pepper or other colorful bell peppers. Diced green chiles are another great way to add some flavor.
  • Cherry tomatoes - fresh diced tomatoes, or also sun dried tomatoes are excellent in this breakfast treat.
  • Salt, black pepper, and garlic powder - can't go wrong with these basics.
  • Cheese - we love sharp cheddar, but other great choices are feta cheese, goat cheese, or pepper jack.

Tools You Might Need

You only need a few tools to pull this off: a slow cooker/crock pot to do the heavy lifting, a bowl for mixing your ingredients, a whisk to beat those eggs nice and smooth, and a large skillet to cook your sausage and peppers before tossing everything together.

My favorite slow cooker is the Ninja Foodie because it's so versatile. You can slow cook things of course, but it also has a sear, sauté, and braise setting. Read more about what it can do by clicking the link below.

How to Make this Easy Breakfast Casserole

You won't believe how easy this is - just whisk your eggs and cream, mix in the cooked sausage, veggies, cheese, and spices, then pour everything into the crock pot. Set the slow cooker for 30 minutes, and you're all set!

step 1. cook sausage

Step 1. Brown the sausage, remove and drain on paper towels.

step 2. cook veggies

Step 2. Sauté the peppers in the drippings left from the sausage.

Step 3. Whisk the eggs and cream in a bowl until blended.

step 4. pour into crockpot

Step 4. Butter or grease your slow cooker, then pour in the beaten eggs and cream.

step 5. add other ingredients

Step 5. Stir in the meat and veggies, salt, pepper, and garlic powder.

step 6. add cheese

Step 6. Cover with the lid and heat on high for 30 minutes. Sprinkle with cheese, leave the lid on until the cheese melts.

Bonus Tip 👇

Try not to lift the lid on the crockpot as it cooks. Allow the steam to build up to make the eggs nice and fluffy.

Turn this Slow Cooker Recipe into a Week of Healthy Breakfasts

  1. Make the recipe as shown in the recipe instructions.
  2. Cool, and cut into portions.
  3. Place in an airtight container, and store in the fridge.
  4. Eat within 5 days.

Want another easy breakfast recipe that you can meal prep for a week of healthy grab and go breakfasts? Or are you looking for a unique brunch option? Try my Jalapeno Popper Breakfast casserole (it's gluten free).

How to Reheat for an Easy & Hearty Meal

  1. Remove a portion from the fridge, place on a plate
  2. Cover loosely with a paper towel or plastic wrap in case the egg pops while heating.
  3. In the microwave, heat on high heat for 30 seconds.
  4. If it's not heated through, heat for an additional 20-30 seconds until it's hot and ready to eat.
  5. Top with hot sauce, sour cream, etc. and enjoy.

Slow Cooker Breakfast Frittata ( Easy, Low Carb)

Cozy, creamy, throw-it-all-in-a crockpot, easy, cheesy, and delicious - this low carb healthy breakfast is done  in only 30 minutes! Let the crockpot make you breakfast while you get ready for the day.

  • Author: beneficialbento
  • Prep Time: 10 minutes
  • Cook Time: 30 minutes
  • Total Time: 40 minutes
  • Yield: 8 slices 1x
  • Category: breakfast
  • Method: slow cooker

Ingredients

Scale
  • 12 large eggs
  • ¼ cup heavy cream (see Notes)
  • 1 lb. breakfast sausage
  • 1 cup diced bell pepper
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ½ cup shredded cheddar cheese, or to taste

Instructions

  1. On medium high heat, brown the sausage, remove and drain on paper towels.
  2. Sauté the peppers in the drippings left from the sausage (or you can just cook them both together if you like).
  3.  Whisk eggs and cream in a bowl until blended.
  4. Butter or grease your slow cooker, then pour in the egg mixture.
  5. Stir in the meat and veggies, salt, pepper, and garlic powder. Reserve the cheese for later.
  6. Cover with the lid and heat on high for 30 minutes. Once the eggs are set, sprinkle with cheese and leave the lid on just until the cheese melts.

Notes

I highly recommend using heavy cream for this recipe, but half and half or milk will work fine - you just might lose some of that dreamy creaminess!

You can substitute cooked and crumbled bacon for the sausage if you prefer. 5-6 slices of bacon works well in this recipe.

Recipe Variations

Sausage Swap:
Replace the breakfast sausage with turkey sausage, bacon (or turkey bacon) or plant-based options.

Veggie Boost:
Add extra veggies like mushrooms, spinach, zucchini, or tomatoes to pack more nutrients and flavors. We LOVE diced sun dried tomatoes in this frittata!

Cheese Choices:
Opt for pepper jack or mozzarella instead of cheddar for a nice change of pace.

Make it Spicy:
Add diced jalapeños or some red pepper flakes for a little morning heat.

Breakfast, Sandwich Style:
Cut the casserole into squares and use them to make breakfast sandwiches with low carb buns or English muffins.

Frequently Asked Questions

Can I add other veggies?

Absolutely. Feel free to toss in your favorites like mushrooms, spinach, or tomatoes. Just chop them up small so they cook evenly.

Can I make this vegetarian?

Swap the sausage for extra veggies or plant-based sausage alternatives. Cheese and eggs keep it hearty without meat.

Can I do some of the prep the night before?

Yes, combine the cooked sausage, veggies, egg, cream and spices the night before and keep it in the fridge. Just give it a quick stir before adding it to the crockpot the next morning.

Is this recipe suitable for keto?

Definitely. It's packed with protein and fats, low in carbs, and fits well into most keto meal plans.
