3 French Hens Bento

"On the 3rd day of Christmas, my true love gave to me
3 french hens,
2 turtle doves,
and a partridge in a pear tree"

So I made 3 chicken nugget hens wearing purple potato berets - which I hoped would make them look "extra french". They are wishing you Merry Christmas in french - which is Joyeux Noel : )  It's a little hard to see, so here's a closer look:

The hens' faces are made from cheese ( for the eyes) and orange and red bell pepper for the beak and comb. As usual, I used a nori punch for the eye details. Also in this lunch is steamed broccoli, rice, clementines, grapes, blackberries, and some mixed nuts.

These chicken nuggets are gluten free. I make ground chicken breast into tiny patties, and dip them first in tapioca starch, then egg, then a mixture of brown rice flour, dry instant potato flakes ( the secret to crispy gluten free nuggets!) millet flour, and seasonings - this time I used chicken boullion powder, and seasoned salt. Then I bake them in the oven on a cookie sheet  coated with 2 tbsp. oil.

The reason I didn't give you an official recipe is because I usually make it a little different every time. I don't measure the flours, I just throw a handful into a bowl. But it always works out, and everyone loves them!

I hope you have a wonderful weekend! At our house, we are listening to some beautiful Christmas music while the most PERFECT gentle snow is falling outside! It's a beautiful, Christmas-y day!

Here are some things I used to make this lunch, and where to buy them... BTW, some of you have asked where I got the cutting tool I used for the "Joyeux Noel". Unfortunately, it's something I bought in San Francisco. I hope it will be available online sometime, and if it is, I'll let you know where to buy it  : )
