Gluten Free Beef Stroganoff - Easy Crockpot Recipe

Hearty, silky, slow-simmered gluten free beef stroganoff has a delicious depth of flavor that makes it feel really fancy and special. But with a crockpot and gluten free cream of mushroom soup -  it could  not be easier.

We just can't get enough of topping our rice or noodles with this luscious and velvety sauce filled with tender braised beef! This easy beef stroganoff is a tried and true meal that has BEEN THERE for our family and it can be there for you, too. And the mushrooms can be on the side or incorporated into the sauce - however you like it.

What to Serve with Beef Stroganoff

This recipe can be a meal in itself, but if you're making a full spread here are a few favorites that pair with beef stroganoff deliciously:

  • Low carb half calorie rice
  • Low carb mashed potatoes
  • Chopped salad with crispy chickpeas and cucumbers
  • Healthy 8 salad mix
  • Homemade apple pie

Simple Ingredients

For the Sauce:

  • a tender beef roast - good cuts are chuck roast, beef tenderloin, or rump roast.
  • oil, such as avocado
  • cornstarch, to dredge the beef in. This will help to make the sauce thick and glossy as it cooks.
  • salt and pepper, to taste
  • spices - garlic powder, thyme, and savory. Scroll down to the FAQs to read more about savory, if you're not familiar with this delicious seasoning.
  • gluten free cream of mushroom soup -this is a huge time saver! I've been making this classic comfort food with cream soup for decades. It's an easy recipe for busy weeknights.
  • dijon mustard - this is common in traditional beef stroganoff recipes. It adds a little bit of tangy flavor, but the flavor doesn't stick out at all.
  • beef broth - this helps turn cream soup into a flavorful sauce

For the Sauteéd Mushrooms:

We have mushroom lovers in our family, and mushroom haters, too. Most of the time I cook the mushrooms separately from the stroganoff and serve them on the side so the whole family can dish it up the way they like.

  • fresh white button mushrooms, rinsed with water. I soak my mushrooms in water before cooking them for the best results. If you sauté dry mushrooms they will absorb all the butter before they get browned. When mushrooms are full of water they will get nicely browned and crispy when they're cooked.
  • butter - to cook the mushrooms
  • salt and pepper - season the mushrooms as they cook.

Best Gluten-free Noodles

Three types of gluten free pasta that are perfect for gluten free beef stroganoff:

  • Jovial brown rice tagliatelle noodles
  • Trader Joe's corn and rice tagliatelle
  • A Taste of Thai wide rice noodles

Best Gluten-free Cream of Mushrooms Soup Brands

These are my three favorite brands of gluten free cream of mushroom soup (the condensed soup in a can) that are just right for gluten free beef stroganoff. I've seen them all in stores like Walmart, Target, and Smith's (also known as Kroger's).

  • Campbell's gluten free cream of mushroom soup
  • Great Value gluten free cream of mushroom soup (Walmart's brand)
  • Pacific gluten free cream of mushroom soup

Best Cuts of Beef for Stroganoff

When choosing beef for this recipe, you want to look for tender cuts of beef, like chuck roast, beef tenderloin, rump roast, or beef brisket.

It's not a good thing to use very lean cuts of beef (such as stew meat or sirloin steak) for this stroganoff recipe. Even though this recipe cooked in a crock pot, which can be a good choice for tenderizing tougher cuts of beef (as long as it's cooked for a long time), it doesn't work well in this case. I made this gluten free beef stroganoff using lean stew meat, and it just didn't turn out well. It was a little too chewy and nobody liked it much.

Stick with tender cuts of beef that contain some fat and connective tissue for the most tender and creamy beef stroganoff.

My Favorite Slow Cooker

I love my Ninja Foodi! I mainly use it as a slow cooker, but you can also sear, braise, and keep things warm in it.  And you can take the pan out and put it in the oven.

Here's How You Make it

Step 1. Cut beef into smaller pieces, about 2 inches. Season with salt and pepper and coat in cornstarch.

step 3. cook on high 3 hours

Choose the slow cook setting- high heat for 3 hours, or low heat for 5-6 hours.

step 4. combine soup, mustard, broth

Step 4. Combine soup, mustard, broth. Add the soup mixture to the slow cooker and allow it to continue cooking.

step 5. cook mushrooms

Step 5. In a large pan over medium-high heat, melt the butter. Add the mushrooms, and cook and stir until sizzling and browned.

Ingredients

Scale
  • 3 ½ to 4 pounds beef roast, like chuck, tenderloin, or rump roast
  • 2 tablespoons oil, such as avocado
  • ¼ cup cornstarch
  • salt and pepper, to taste
  • 2 teaspoons garlic powder
  • 1 teaspoon thyme, dried
  • 1 teaspoon savory, dried
  • 2 cans gluten free cream of mushroom soup (see Notes)
  • 2 teaspoons dijon mustard
  • ⅔ cup beef broth
  • 8 oz. fresh sliced mushrooms, rinsed with water
  • 2 tablespoons butter
  • sour cream or plain Greek yogurt, to taste

Instructions

  1. Cut chuck roast into smaller pieces, about 2 inches.
  2. Season with salt and pepper to taste. Sprinkle the pieces with cornstarch.
  3. Set the Ninja Foodi Multi cooker to "sear". Add the oil, and brown the beef.Add garlic powder, thyme, and savory. Alternatively you could use a large skillet to brown the beef if your crockpot doesn't have that setting.
  4. Choose the slow cook setting- high heat, for 3 hours, or low heat for 5-6 hours.
  5. Combine 2 cans of gluten free cream of mushroom soup with beef stock and dijon mustard. Add the soup mixture to the slow cooker and allow it to continue cooking.
  6. In a large pan over medium-high heat, melt the butter. Add the mushrooms, and cook and stir until sizzling and browned. Mushrooms can be added at any time during the slow cooking process, added at the end, or can be served on the side for those that don't appreciate how good mushrooms are 🙂
  7. When the beef stroganoff is done, stir in some sour cream or plain Greek yogurt to taste, from a few tablespoons up to ½ cup (as desired). Serve over gluten free noodles, rice, or mashed potatoes.

FAQs About Beef Stroganoff

Can you freeze beef stroganoff? 

Beef stroganoff is easy to freeze, and reheats well in the microwave. Store leftovers in an airtight container that is freezer-safe. When ready to serve, thaw the frozen stroganoff either by using the microwave, or by allowing it to thaw in the refrigerator the day before serving it. Microwave on high heat for 2-3 minutes at a time, stir, and heat longer if needed until it is warmed through.

Is beef stroganoff gluten free?

Classic beef stroganoff is typically not gluten free, because of the wheat based flour that is used as a thickening agent in the sauce.

Why is my beef stroganoff runny? 

Adding sour cream before the sauce has finished cooking may make the beef stroganoff runny. Adding too much beef broth can also make the stroganoff sauce thin and runny.

Is beef stroganoff always served with noodles? 

Originally beef stroganoff was served over shoestring potatoes or mashed potatoes. Other pasta shapes are equally as good as egg noodles. We often eat our beef stroganoff over rice, since it is naturally gluten free.

What is savory (herb)?

Savory is a type of herb or seasoning. Its flavor can be described as peppery, with notes of sage or thyme, and a hint of mint. The dried or powdered version of savory can be found in jars in the spice section of most local grocery stores.

What is a good gluten free substitute for noodles in beef stroganoff?

Jovial brand makes gluten free brown rice egg noodles that are really good. Tagliatelle pasta is a shape similar to wide egg noodles, and several brands make gluten free versions that are made of corn and rice flour. Asian brands make wide rice noodles that go very well with this gluten-free beef stroganoff recipe. You can find these in most major grocery stores in the Asian cuisine section, or if you have an Asian market close to you that would be an ideal place to shop.
