These Cashew Cocoa Fudge Bites are such a great little healthy treat to have stashed in your fridge or freezer - especially during this busy holiday season! The pace of life really picks up in November and December, and it seems like I am always, always running to the store. And why is it that every time I run to the store, it happens to be at a time that I am starving to death? Ah, life. You always conspire against my weight loss efforts...

But I can stick to my healthy weight loss plans if I have a little snack bag with a couple of these little Cashew Cocoa Fudge Bites in it, tucked away in my purse. You can even eat them right there in the store, and give your hunger the boot without resorting to candy or fast food!

With only 5 ingredients, these Cashew Cocoa Fudge Bites are easy to whip up in the food processor. Keep them on hand when you are out running around and need something healthy and low-cal when hunger strikes!

WHAT'S IN THIS RECIPE

Simple! Just 5 ingredients, whipped up in a food processor or blender will get you a nutritious, sweet little snack that you can pull out when you need it the most.

  1. cashew butter ( or other nut butter)
  2. vanilla whey protein powder
  3. pitted dates
  4. unsweetened cocoa powder
  5. plain, non-fat greek yogurt

TIPS AND TRICKS

  • Great way to store these: I love those little snack sized, zip top plastic bags that are showing up in lots of grocery stores. They have portion sizes ( like ¼ cup, ½ cup, etc.) marked on the bag. They are really slim, so they're SO easy to tuck into a lunch or just in your purse or gym bag.
  • When you make this recipe, make sure to drain the water from the dates when after you soak them. They will be too mushy otherwise!
  • I like to keep mine in the fridge, but they don't lose their shape if you keep a bag of them in your purse or your car. Frozen ones taste really great, too!

Here's a perfect little healthy snack to keep on hand to keep you on track with your weight loss goals. With only 5 ingredients, they can be whipped up in the blender in a matter of minutes.

Ingredients

  • ½ cup cashew butter (or other nut butter)
  • ½ cup vanilla whey protein powder (or one scoop)
  • ½ cup pitted dates
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon plain (non-fat greek yogurt)

Instructions

  1. Place the dates in a small bowl and cover with warm water to soften them. Let sit for about 5 minutes.
  2. Put the cashew butter, protein powder, cocoa powder, and greek yogurt in a food processor or blender.
  3. After the dates have softened slightly, drain the water from them and add them to the food processor.
  4. Process until very smooth, with a texture like clay.
  5. Separate into 14 small pieces ( about 1 tablespoon sized), and roll into small balls.
  6. Store in a container with a lid in the freezer or fridge until firm.

    I would love me some round spheres of Cocoa goodness. Ad a cashew, heck add a peanut I don't give no never mind. Anything chocolate with a great mouth feel center makes my heart beat like a .......thing that beats. Next time you make these little nuggets of goodness, throw one into a envelope and I will come to your house and pick it up.
