Fall Desserts: You'll want to top a lot of favorite desserts with this, but especially for special fall occasions, like Thanksgiving. 

Pumpkin pie? Perfect! 

Apple crisp? Absolutely! 

Pecan pie? You bet! ( I couldn't think of any more alliterations).  

The warm spice notes make it the perfect topping for all those autumn treats.

Lighter Topping for Cupcakes: If you're looking for a less sugary option for topping cupcakes, this is your answer. It provides that creamy finish without piling on too much sweetness ( I'm looking at you, frosting). Try it on my gluten free chocolate mug cake for a delicious treat!

  • Heavy whipping cream: The star of the show! Make sure it's cold straight from the fridge for the best whipping results.
  • Maple sugar or maple syrup: Use real maple syrup here, not pancake syrup! The authentic flavor makes such a difference, and it's a natural sweetener you can feel good about. Read on to learn more about maple sugar, plus a link for where to buy some.
  • Ground cinnamon: Fresh cinnamon is best-grab a newer jar if yours has been sitting in the cupboard for ages. The flavor really shines through!
  • vanilla extract: (not shown in the picture) Just a tiny bit compliments the other warm fall flavors.

Maple Syrup or Maple Sugar?

We tested both maple syrup and maple sugar as a sweetener for this recipe, and the truth is, you'll get the same sweet maple flavor in your homemade whipped cream whether you use maple syrup or maple sugar. 

 Real maple syrup can be found in most grocery stores, but maple sugar is a little trickier to track down. I ended up buying a jar from Amazon. Personally I love maple sugar, so that's what you'll see in the pictures. But I wanted you to know that you can use good old maple syrup and get the same delicious flavor.

Let's Make Some Maple Cinnamon Whipped Cream!

These steps are so easy, you barely need any pictures. But I took some anyway, because I'm cool like that. Scroll down to read the recipe card to get the full amounts and instructions.

step 1. add cream, maple sugar, cinnamon

Step 1. In a mixing bowl, add cream, maple syrup, vanilla, and cinnamon.

step 2. mix to combine

Step 2. Beat with a hand mixer on medium speed to blend the ingredients.

step 3. whip to stiff peaks

Step 3. As it begins to thicken, turn it up to high speed and whip until stiff peaks form.

4. cover and chill

Step 4.  Chill in a covered container until serving time. Ideally, make a  day ahead since the flavors improve the longer it chills.

Stiff Peaks vs. Soft Peaks

 What does "stiff peaks" mean? That means when you grab a spoonful of whipped cream, it can form a peak and stand up on its own. Soft peaks are when the whipped cream looks more blobby and flops over. And keep in mind that you can't keep mixing forever! If you go too far, you'll end up with butter instead of whipped cream. (Though homemade butter isn't the worst problem to have!)

Ingredients

Scale
  • 1 ½ cups heavy cream, as cold as possible
  • 3-4 Tablespoons maple sugar or maple syrup, to taste
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

Instructions

  1. In a large mixing bowl with an electric hand mixer, (or the bowl of a stand mixer with the whisk attachment) add the heavy whipping cream, the maple sugar or pure maple syrup, and the cinnamon. It helps to chill the mixing bowl and beaters if you have time, but I don't always do that.
  2. Beat on medium speed to blend the ingredients.
  3. As it begins to thicken, turn it up to the highest speed and whip the cream until stiff peaks form.
  4. Chill in an airtight container with a lid. The whipped cream will last for 2-3 days in the refrigerator. The flavor improves the longer it chills.

How Far in Advance Can You Make Whipped Cream?

Pop any leftovers in an airtight container and keep them in the refrigerator for 3-4 days. You might need to give it a gentle whisk before serving if it settles a bit, but that maple-cinnamon flavor? It just keeps getting better as it sits!

Can you whip cream in a blender?

Yes but it's a challenge to get the cream out once it's whipped. Some of it will just go to waste. It's just as easy to use a hand-held electric mixer and a bowl, which you can wipe clean with a spatula - much faster overall, and no waste!

What is the best tool to make whipped cream?

Use a stand mixer if you're making a lot, or a hand blender or mixer if you're making less than 2 cups.

Is homemade whipped cream better?

Yes. Yes it is. Better flavor, better nutrition - no additives.

What is the secret to whipping cream?

Chill you cream. And you can go the extra mile by chilling your bowl and beater attachment too.

Can you freeze whipped cream?

It is possible!  Store it in an airtight, freezer safe container, or put blobs of the whipped cream into freezer safe bags. Thaw it by placing it in the refrigerator for a few hours or the day before you need to serve it.

Can you use an immersion blender to whip cream?

Yes you can. This works best if you're planning to make a small amount, like 1 cup or less. I do this by putting the heavy cream in a tall cup that the immersion blender fits all the way inside, so it can move up and down slowly. This action will whip the cream into stiff peaks.
