Gluten Free Flat Bread - Great for Pizza Crust

This delicious gluten free flat bread can be made in less than an hour. And yes, it even contains yeast. How can this be? Read on to find out!

This post is for all my fellow gluten free friends, especially those who love a good deli sandwich, or a hot pizza with melty cheese - not the frozen kind from a box where the cheese barely changes shape. And if you've ever had a frozen gluten free pizza, you know what I'm talking about!

You know those kind of days where you are busy all day? So busy that you have a hard time stopping to get some lunch, or even some dinner? This happens to me from time to time, too. And on days like that, when my stomach is growling, I start thinking about ordering a pizza. Or grabbing a big sandwich from a deli. That's the kind of food that you can eat with one hand, and get back to work quickly. My kind of lunch on the busiest of days!

However, that's not such an easy thing to come by when you're gluten free. You need another solution. This recipe is one possible solution on a busy day - you can make this from scratch in less than an hour!

If you have a good supply of gluten free ingredients in your pantry, it will be easy to make up this recipe. Here's what's in it:

  • Some basic baking ingredients like baking powder, salt, honey, and oil
  • Gluten free flours - rice, tapioca, potato starch, and sweet rice flour. All of these can be found easily at Asian markets, if you have one in your area.
  • Almond flour, which helps this bread get a nice golden brown color
  • Powdered milk, which I use in so many of my gluten free bread recipes.

Gluten Free Flat Bread - Great for Pizza Crust

This delicious gluten free flat bread can be made in less than an hour, even though it contains yeast! It's perfect for sandwiches and makes a yummy pizza crust, too.

  • Total Time: 45 minutes
  • Yield: 2 servings 1x

Ingredients

Units Scale
  • ⅔ cup hot water
  • 2 teaspoons honey
  • 1 teaspoon active dry yeast ( rapid rise yeast works too)
  • 1 teaspoon vinegar
  • 1 tablespoon oil, such as avocado or olive oil
  • ½ cup Kristie's Brown Rice flour blend (*see note below)
  • ¼ cup sweet rice flour
  • ¼ cup almond flour
  • 2 tablespoons dry instant milk powder
  • ¼ teaspoon xanthan gum
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. In a small bowl, add the hot water, honey, yeast, oil, and vinegar. Set aside to proof (get foamy and bubbly). And by "hot tap water", I mean water that feels like a nice, hot bath - but not too hot to touch.

  2. In a large mixing bowl, combine the flours, powdered milk, xanthan gum, baking powder, and salt. Stir to blend.

  3. When liquid mixture is foamy, add to dry ingredients, along with the oil.

  4. . In a mixer beat for 2 minutes. This will take the place of kneading the dough and should not be skipped.

  5. Cover with a towel and let the dough rest for 20 minutes.

  6. Preheat oven to 400 degrees.

  7. While the oven heats, line a baking sheet with parchment paper, and spray with cooking spray.

  8. Using a wet spatula, spread the dough in a thin layer ( about ¼ inch thick) on the pan.

  9. Bake for 15 minutes, until just beginning to turn golden brown in places.

  10. Remove from oven to cool. While it's still warm, roll it up in the parchment paper and let it finish cooling.

  11. This will make it easy to make sandwich rolls. After it's cooled completely, you can store this parchment roll in a plastic bag until you're ready to use it.

  12. This will keep well at room temp. for about 24 hours. After that it should be stored in the fridge. Gluten free bread tends to turn hard and crumbly when cold, but reheats and softens beautifully in the microwave. Try 15 - 30 seconds on high for 1-2 servings of bread.
