Chocolate No-Bake Cookies

No bake chocolate cookies are not sweetened with sugar, and are gluten free and dairy free. 

They have just the right balance of salt, sweet, chew, and fantastic fudge flavor. But the best part is - all the ingredients in this treat are anti-inflammatory and are so good for you!

Ingredients

  • 3 Tablespoons unsweetened cocoa powder
  • 1/2 cup peanut butter (or other nut butter such as almond or cashew butter)
  • 1/4 cup + 2 Tablespoons honey
  • 1/4 cup unrefined coconut oil
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/2 cup rolled oats ( quick is preferred, but regular works too)
  • 1 Tablespoon flaxseed meal
  • 1/3 cup unsweetened dry coconut flakes

Instructions

  1. Combine cocoa powder, nut butter, honey, coconut oil, and salt in a microwave-safe bowl.
  2. Heat on high for 1 minute at a time, stir, and heat for 20-30 seconds more if needed to melt all the ingredients. Add the vanilla.
  3. In a larger bowl combine the oatmeal, flaxseed meal, and coconut flakes. Stir to blend together.
  4. Pour the liquid mixture into the dry mixture and  stir until the ingredients are very well incorporated. This might seem dry at first, but be patient and keep stirring - it will come together.
  5. Using a small cookie scoop (or a spoon) scoop and pack the mixture into a ball.
  6. Drop it into a tray or dish lined with parchment paper.
  7. Chill uncovered in the fridge until set. The texture will be like very firm fudge.
  8. Store in a covered container in the fridge, or freezer.

Notes

If you can't eat peanuts, you can substitute another nut butter like almond butter or cashew butter. You may need to add a pinch more salt to the liquids after heating in the microwave - taste and adjust to your liking.
