Recipe for Super Food Salad

  • Super Food Salad
  • 1 bunch of raw kale (stems removed and finely chopped)
  • 1 8 oz . bag of frozen shelled edamame (thawed to room temperature)
  • 1/3 cup of dried cranberries
  • cup about 1/3 ( more or less (depending on taste) of salted sunflower kernels)
  • 1/4 cup raw (or salted cashews)
  • 1 large carrot (grated)
  • cup about 1/3 to 1/2 bottled lite raspberry vinaigrette (to taste, or homemade)

Instructions

  1. Combine all ingredients in a large bowl and toss together. Cover and chill for several hours before serving, as the flavor improves over time.
