This was one of the super simple lunches that I threw together for my crew as they headed off to work. Event hough my husband, son, and daughter are not in school currently – our youngest son is going to be a senior in high school this year, so I do have one more year of school lunches to get ready for. This is a perfect example of the kind of lunch that is a “throw together” kind of thing for me, and it would be a great last minute lunch to send off with your kids for school.
What’s for Lunch?
I spiffed up the old, standard tuna sandwich lunch by including these sides packed in our Easy Lunchboxes:
- Green salad – this super healthy salad features kale, broccoli, and other veggies and it took me literally about a minute to pack ( the salad dressing is in a little jar on the side). My secret to having healthy veggies always ready to go is my Salad Bar and Salad Bowl idea that I came up with about 4 years ago. If you’re looking for an easy way to get more vegetables in your family’s meals, then this is it!
- Watermelon chunks and grapes – I keep fresh fruit cut up in our fridge so it’s ready to grab for lunches and snacks, and this is a weekly habit for me. You can read more about it in my Weekly Food Prep 101 post to see how I do it.
- Sharp cheddar cheese and turkey pepperoni stick – A small portion of extra sharp cheddar cheese can go a long way – this portion is only about the size of my thumb, but the flavor is so intense that a little bit is very satisfying and you don’t feel like you need more. Along with that, I’ve added a Vermont Uncured Turkey Pepperoni Stick, that came in my Degustabox this month. Normally I don’t consider these kinds of snacks for my family’s lunches, but this one has no preservatives, no nitrites, is gluten free ( yay!), and hormone free. It also has a whopping 10 grams of protein, and is low in fat and calories! I would definitely consider buying them online to include in our family’s lunches this year.
